Good recipes don't live behind the paywall of a paper you're trying to quit.
No one likes reading a whole damn personal essay before getting to the part where there’s actually instructions, but there are plenty of places with tested recipes and reasonable layouts. I tend to stick to a few staples so this is entirely based on search returns, but there’s lots out there.
Where to cook
America’s Test Kitchen: I always triple the spices, but with that caveat ATK has taste and technique for everything.
I’ve heard good things about Serious Eats, Milk Street, and Smitten Kitchen.
